This week we got Easter off to a delicious start, with the first of THREE weeks of cooking and baking workshops around Yorkshire!
Gateways School in Leeds opened their kitchen doors as local children joined us to make a series of Eggsellent Easter recipes. With Spring in the air and lots of excited chefs, we wasted no time in getting them stuck into lots of delicious, fresh recipes perfect for recreating at home! Here are two of our favourites:
Spring Morning Muffins
INGREDIENTS (makes about 6 muffins)
1 mashed banana
1/2 tsp vanilla extract
1 tsp cinnamon
120ml Greek yoghurt
pinch of salt
Optional yummy ingredients like blueberries, apple, raspberries, blackberries, nuts
STEP 1: Preheat oven and start mixing!
Preheat your oven to 180C. While that's heating, pop a ripe banana into a mixing bowl and give it a good mash with a fork - you want it to be mostly smooth, but it doesn't matter if there are a few little lumps in there.
STEP 2: Add in the other ingredients
Crack an egg into the bowl and stir it in to the smooshed banana with a wooden spoon. Then it's time to add in the vanilla, honey, cinnamon, salt and Greek yoghurt. Mix again! FINALLY, add in the oats and milk, stirring for a final time.
Top tip: if a sneaky bit of egg shell falls into the bowl when you crack it, don't worry. You can use an empty half of the egg shell to scoop it out, it works really well!
STEP 3: Fill the muffin cases and add optional fruit/nut
Put 6 muffin cases into a muffin tin and start adding in the mix. BUT (this is important), only fill them quarter full! This is because you'll want to add in some of your favourite optional ingredients to the middle of the muffins.
STEP 4: Finish filling the muffin cases and BAKE!
Once you've added your fruit/nuts, continue filling the muffin cases with the remaining mix. Pop in the oven for 30 minutes or until a lovely golden brown.
Top tip: remember that the oven is VERY hot so you need to be extra careful when putting things in and taking them out again. Muffins taste best warm, so leave them on the side for at least 15 minutes before seeing if they've cooled enough to eat.
BBQ Turkey Burgers
450g turkey mince
1 tbsp coriander
1 tbsp worcestershire sauce
Buns, cheese, salad and any toppings you like to finish!
STEP 1: Chop the onion
First, we want to chop the onion into little pieces. This can be a little tricky and we need to be really careful when using anything sharp, so always ask for help. We like to chop the onion in half first, then remove the peel and start chopping into little pieces.
Top tip: Because of the acids in onions, chopping them can make your eyes water. There are lots of different tips on how to avoid this: leave the 'root' end in tact when chopping, stick your tongue out, even wearing sunglasses! It's a fun chance to experiment and see which works best for you. But remember, try not to touch your eyes with your hands - it will make them water more!
Step 2: Get mixing
Add the onion to a big bowl along with the mince, breadcrumbs, coriander and worcestershire sauce. Give it all a good mix with a wooden spoon, and add a little salt and pepper if you like.
Step 3: Get messy!
This is a really fun part - dig your hands into the gooey mix and form into four burger patties (or as many as the mix allows). When ready, place in the fridge for at least half an hour to firm.
Top tip: make sure all the burger patties are the same size, as we want them to cook at exactly the same rate.
Step 4: GRILL!
When you're ready to cook your burgers, place them under the grill on a medium heat for 10 minutes. Keep checking on them every few minutes though, you don't want them to burn! When they're ready, take them out (carefully, they'll be hot!) and eat them however you like! We like to top with cheese and eat in a burger bun with salad, YUM.
